How do data vendors collect all this information while maintaining people’s right to privacy?

I’m new to the field of data science and I’m just shocked at the kinds of data that people collect! Credit card transactions, clicks per page, where I went, how long I stayed there, what kind of fuel I use to heat my home–where’s the privacy? Who makes sure these data providers keep our identities safe? How much information on individuals do they share publicly? Who stops them from collecting too much info? How do I know what they have on me?
